Wine Active Compounds (WAC) 2014

Following the successful WAC2011 in Beaune, March 2011, under the auspices of the UNESCO Chair “Culture & Traditions of Wines” and the Institute “Jules Guyot” at University of Burgundy, the WAC2014 Organizing Committee is delighted to introduce the third Edition of the International Conference Series on Wine Active Compounds in Beaune, Burgundy, from March 26 to 28, 2014.

The WAC 2014 conference will thus be organized around the following sessions:

  • vineyard managements (conventional, organic, bio-dynamic, …) and their impacts on wine
    active compounds, and what drives the consumer preferences.
  • process-related active compounds associated with the most recent microbiological and/or
    physico-chemical techniques, and how technical innovations face legal and social norms.
  • sensory-related active molecules, and what can perceptions, acceptations, prescriptions and
    discourses tell about that.
  • health-related active molecules, including both health-promoting compounds and health detrimental
    compounds, and what are the related social representations.

Call for Papers Deadline: October 11, 2013.
